A lot of energy ball recipes start with oats, nut or seed butter, and maple syrup or honey. That seems like a good way to “accidentally” gobble up a lot of fatty nut butter and sugary maple syrup! Although made with only three whole food plant ingredients, my treats taste like caramel popcorn peanut butter rice crispy treats.
Toasting the oats and buckwheat groats makes them taste nutty, and the groats get crispy! Combine them with caramelly dates for a high-fiber, low-fat treat that is good for you!
While you eat your first batch look up the nutritional profile of dates, oats, and buckwheat groats and congratulate yourself for making such healthful food choices!
I N G R E D I E N T S
1 cup oats! Use gluten-free oats to make gluten-free balls.
1/3 cup buckwheat groats!
90-100 grams pitted dates! Use more dates for sweeter balls.
M E T H O D
Toast your oats in a dry pan on medium heat. Flip them frequently to toast them evenly! Toast them until they are a nice golden brown. When done, transfer to plate to cool.
Toast buckwheat groats the same way you toasted your oats. Transfer to a plate to cool. Add cooled toasted oats and dates to a food processor or blender. (I use a mini food processor.)
Process until oats and dates form a crumbly mixture.
Combine with buckwheat groats in a bowl. Mix together and form into balls. Wet your hands to keep mixture from sticking.
B O N U S! Add raisins! Add chocolate chips! Add cacao nibs!
