You only need ONE banana to make RUDE PANDA's ONE BANANA BREAD! Who keeps 3 overripe bananas around? I sometimes have one that I didn’t get around to eating when it was perfectly ripe. That’s why my One Banana Bread is my favorite banana bread recipe! It makes two mini-loaves or 4 cupcakes or 1 mini loaf and 2 cupcakes! It’s a great plant-based treat! With this versatile and forgiving recipe you will make banana bread all of the time!


1 ripe banana

6 medjool dates

2 tsp flax seeds

2 Tbsp nut or seed butter (We used tahini used in video.)

1 tsp lemon juice

1 – 2 Tbsp plant milk

½ cup flour of your choice (We used whole wheat pastry flour in this video, but feel free to use spelt, buckwheat or any gluten-free blend)

½ tsp baking soda

What to do

 Preheat oven to 375 degrees Fahrenheit.

Prepare your baking containers by oiling them up. You can make 2 mini-loaves, or 4 cupcakes, or 1 mini-loaf and 2 cupcakes.

Chop dates. Place about 2/3 of your chopped dates into a small bowl.

Measure out 2 tsp flax meal into another small bowl.

Boil water and add 2 Tbsp hot water to your flax seeds and to the dates you put into the small bowl.

Mash banana.

Add other wet ingredients to your banana:nut/seed butter, lemon juice, plant milk, dates and flax seeds.

Blend dry ingredients: flour and baking soda.

Combine everything together. This means, all of the stuff you have in your wet bowl, all of the stuff you have in your dry bowl and the chopped dates you have left.

Pour batter into baking containers and pop them in the oven!

Wait for about 35-40 minutes while they bake and fill your house with the wonderful smells of ONE BANANA BREAD!!!

Lots of variations possible! Add cinnamon, cardamom, and ginger! Add cocoa powder and a few more dates! Add vanilla extract!
