Sheet Pancakes!! Banana Peanut Butter Oatmeal!

Great! It's like having a bowl of oatmeal, but as pancakes.

Garbanzo flour and nut butter lets you skip the butter/oil.

 

Do you think of pancakes as a once-in-a-while-indulgence or an everyday affair?  All of that refined flour, butter and time involved in traditional stove top pancakes can deter anyone in the morning.  I like to eat them often, and I do not have time to be standing around frying up pancakes.  That's why I make sheet pancakes!

 

 

If you have to employ your oven to keep your pancakes warm while you fry them up one by one, I say, "why not just make them int he oven?"  I like to make them on parchment paper, so I don't have to clean afterwards.  They're ready in about 7-10 minutes, which is so much less time than the stove top method. 

 

Make your pancakes on a sheet-pan.  Oil-free, practically hands-free, and minimal clean-up!  You can use your favorite pancake recipe, but if you don't already have one, you can try my BANANA OATMEAL PEANUT BUTTER PANCAKES!!!  Mostly fruit and whole grains, packed with protein and complex carbohydrates, my pancake recipe is a healthy way to start your day!

Banana Peanut Butter Oatmeal Sheet Pancakes!


 

Ingredients

1 cup mashed banana (about 2 medium bananas)

1/4 cup plant milk

2 Tbsp nut butter

1 Tbsp flax meal + 3 Tbsp water

3/4 cup oat flour

1/4 cup oats (or more oat flour)

2 Tbsp garbanzo flour

1 tsp baking powder

 

How

Preheat oven to 400 degrees.

Mix together flax and water.

Mix together your dry ingredients.  If you don't have oat flour, blend up oats in a blender or food processor.

Blend together mashed banana, nut butter, flax mixture, and plant milk.

Combine wet and dry ingredients.  If it seems wet, add a handful of oats.

Pour out onto parchment lined baking sheet.  You should be able to make about 6 pancakes or a 1/4 sheet pan's worth.

Bake for 7-10 minutes. 

 

Ways to enjoy:

  • Top with berries for a P, B & J like experience!
  • Add 1 Tbsp matcha powder and schmear pancakes with sweet red bean paste!
  • Add blueberries for a classic upgrade!
  • Add chocolate chips for a weekend-y treat!
  • Serve with apples cooked in cinnamon, ginger, cardamon and nutmeg for something cozy!
