THROWBACK !! RUDE PANDA TEST KITCHEN! Episode4 ENCHILASAGNE!!
HEY EVERYBODY !!I'm really EXCITED to share this masterpiece with you guys. You may have missed my RUDE PANDA Test Kitchen "Enchilasagne! Hot, yummy vegan fusion oil-free masterpiece! Leftovers and sale produce!!! | RPTK #4" episode on youtube so I've decided to do a TASTY THROWBACK!! I've included the recipe from the video but you can really freestyle this one with whatever leftovers you have laying around!! Here's the recipe and the video!! ENJOY !!
What do you do when you don’t have much other than leftover chili, tortillas and a big bag of tomatoes you got on sale? Make something hot and mushy! Enchiladas and lasagna meet leftover chili in a small cast iron skillet. Dinner couldn’t be cuter or more gut sticking-ly satisfying!!!
Ingredients:
Leftover chili, or beans or lentils
Corn Tortillas
Tomatoes
Cilantro
Block of tofu (We used silken tofu, but really any tofu will work.)
¼ cup Nutritional Yeast
1 tsp White Miso
Lemon zest
Lemon juice
Soy sauce, tamari or Bragg’s
Pepper
What to do and how to do it:
Preheat oven to 375 degrees.
Start your tomato sauce. Slice and/or process fresh or canned tomatoes with cilantro. If you have and like things like garlic, onions and jalapeños add them to your tomatoes when you process them. Pour into a pan and cook while you do the other things you need to do to make this delicious food!
Make tofu. Put tofu into a bowl. Add the zest of one lemon, the juice of half to a whole lemon, ¼ cup of nutritional yeast, about 2 tablespoons of soy sauce 1 teaspoon of Miso and some pepper. Smash with a fork until desired consistency. Make it like cheese!
Assemble your Enchilasagne! Find an adorable pan that is just a little larger than your corn tortillas. Put down a layer of leftover chili. Place tortilla over chili and pile on more chili. Sprinkle with tomatoes or other vegetables you like or got on sale. Spread tofu on a tortilla and place it on top. Sprinkle with tomatoes or other veg. Spread remainder of your tofu on another tortilla and top with the tomato sauce you have bubbling away on your stovetop.
Bake for 45 minutes! Good Time to go do some YOGA! #GoVeganDoYoga !
Pull out of oven and wait for 10 minutes! Slice it up and serve with things you enjoy eating with lasagna or enchiladas!
